Description

Maillard reaction product (MRP) are indicators for heat treatment of food. They are used as marker of the nutritional quality of food. S-Carboxymethyl-cysteine (CMC) is a stable advanced glycation end product and can be used as a potential marker of glycation. It has been found to be a mucoactive drug in vivo.
